Slap Ya Momma Fried Chicken
Ingredients
2½ to 3 lbs chicken pieces (drumsticks, thighs, wings, breasts)
2 cups buttermilk
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Breading:
2½ cups all-purpose flour
2 tablespoons Slap Ya Momma seasoning
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon cayenne pepper (optional)
For Frying:
Vegetable oil or peanut oil
Preparation
In a large bowl, whisk together buttermilk, salt, black pepper, garlic powder, onion powder, and paprika. Add chicken pieces, making sure they are fully coated. Cover and marinate in the refrigerator for at least 2 hours or overnight for best flavor.
In another bowl, mix flour, Slap Ya Momma seasoning, paprika, garlic powder, onion powder, and cayenne pepper. Remove chicken from the marinade, allowing excess to drip off. Dredge each piece thoroughly in the seasoned flour, pressing the coating firmly onto the chicken.
Heat oil in a deep skillet or fryer to 350°F (175°C). Fry chicken in batches, without overcrowding, for 12–15 minutes, turning occasionally, until golden brown and fully cooked. Internal temperature should reach 165°F (74°C). Remove and drain on paper towels or a wire rack.
Let rest for 5 minutes before serving for best texture and juiciness.
Serving Tips
Serve hot with mashed potatoes, coleslaw, mac and cheese, cornbread, or biscuits.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in oven or air fryer for best crispiness.
