Ingredients

Doughnuts

  • 3½ cups all-purpose flour

  • 2¼ teaspoons active dry yeast (1 packet)

  • ¾ cup warm milk (about 110°F / 43°C)

  • ¼ cup granulated sugar

  • ¼ cup unsalted butter, melted

  • 2 large eggs

  • ½ teaspoon salt

  • Vegetable oil, for frying

Glaze

  • 2 cups powdered sugar

  • 3–4 tablespoons milk

  • 1 teaspoon vanilla extract


Preparation

  1. In a bowl, dissolve yeast in warm milk with 1 tablespoon of sugar. Let sit 5–10 minutes until foamy.

  2. In a large bowl, combine flour, remaining sugar, and salt.

  3. Add yeast mixture, melted butter, and eggs. Mix until a soft dough forms.

  4. Knead on a floured surface for 8–10 minutes until smooth and elastic.

  5. Place dough in a greased bowl, cover, and let rise 1–1½ hours, until doubled.

  6. Roll dough to ½-inch thickness and cut doughnuts. Place on parchment and let rise 30 minutes.

  7. Heat oil to 350°F (175°C). Fry doughnuts 1–2 minutes per side until golden.

  8. Drain on paper towels.

  9. Whisk glaze ingredients until smooth.

  10. Dip warm doughnuts into glaze and let set.

Yes, but frying gives the classic texture. Baked doughnuts will be more bread-like.
