Ingredients
-
1 ½ lbs steak (sirloin, ribeye, or strip), cut into bite-size pieces
-
1 lb baby potatoes, halved (or quartered if large)
-
3 tablespoons olive oil, divided
-
4 tablespoons butter
-
4–5 cloves garlic, minced
-
1 teaspoon salt (adjust to taste)
-
½ teaspoon black pepper
-
1 teaspoon paprika
-
1 teaspoon dried thyme or Italian seasoning
-
1 tablespoon fresh parsley, chopped (optional)
Preparation
-
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
-
Add the potatoes, cut side down. Season with salt, pepper, and paprika. Cook for 10–12 minutes, stirring occasionally, until potatoes are golden and fork-tender. Remove potatoes from the skillet and set aside.
-
In the same skillet, add the remaining 1 tablespoon olive oil. Increase heat to high.
-
Add the steak pieces in a single layer. Season with salt, pepper, and thyme. Sear for 2–3 minutes per side until browned and cooked to your liking.
-
Reduce heat to medium. Add butter and minced garlic to the skillet. Stir for about 30 seconds until fragrant.
-
Return the cooked potatoes to the skillet and toss everything together so it’s well coated in the garlic butter.
-
Cook for another 1–2 minutes, then remove from heat.
-
Garnish with fresh parsley if desired and serve immediately.
Tips
-
Don’t overcrowd the pan when cooking steak—cook in batches if needed for a good sear.
-
Add a pinch of red pepper flakes if you like a little heat.
-
This dish pairs well with a simple green salad or steamed vegetables.
