Garlic Butter Steak and Potatoes Skillet

A hearty, one-pan dinner that’s packed with flavor. Juicy steak bites, crispy golden potatoes, and a rich garlic butter sauce come together fast—perfect for busy nights when you still want something satisfying.

Ingredients

  • 1 ½ lbs steak (sirloin, ribeye, or strip), cut into bite-size pieces

  • 1 lb baby potatoes, halved (or quartered if large)

  • 3 tablespoons olive oil, divided

  • 4 tablespoons butter

  • 4–5 cloves garlic, minced

  • 1 teaspoon salt (adjust to taste)

  • ½ teaspoon black pepper

  • 1 teaspoon paprika

  • 1 teaspoon dried thyme or Italian seasoning

  • 1 tablespoon fresh parsley, chopped (optional)

Preparation

  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

  2. Add the potatoes, cut side down. Season with salt, pepper, and paprika. Cook for 10–12 minutes, stirring occasionally, until potatoes are golden and fork-tender. Remove potatoes from the skillet and set aside.

  3. In the same skillet, add the remaining 1 tablespoon olive oil. Increase heat to high.

  4. Add the steak pieces in a single layer. Season with salt, pepper, and thyme. Sear for 2–3 minutes per side until browned and cooked to your liking.

  5. Reduce heat to medium. Add butter and minced garlic to the skillet. Stir for about 30 seconds until fragrant.

  6. Return the cooked potatoes to the skillet and toss everything together so it’s well coated in the garlic butter.

  7. Cook for another 1–2 minutes, then remove from heat.

  8. Garnish with fresh parsley if desired and serve immediately.

Tips

  • Don’t overcrowd the pan when cooking steak—cook in batches if needed for a good sear.

  • Add a pinch of red pepper flakes if you like a little heat.

  • This dish pairs well with a simple green salad or steamed vegetables.
