Crispy Skillet Potatoes with Caramelized Onions
Golden, crispy potatoes paired with sweet, slow-cooked caramelized onions make this simple skillet recipe a perfect side dish for just about any meal. It’s made with everyday ingredients and delivers big flavor with minimal effort.
Ingredients

1½ lbs potatoes (Yukon gold or russet), peeled and diced

2 tablespoons olive oil

2 tablespoons butter

2 large onions, thinly sliced

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

½ teaspoon paprika (optional)

½ teaspoon garlic powder (optional)

Fresh parsley for garnish (optional)
Method

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat.

Add the sliced onions and a pinch of salt. Cook slowly for 15–20 minutes, stirring often, until the onions are soft, golden, and caramelized. Remove from the skillet and set aside.

In the same skillet, add the remaining olive oil and butter. Increase heat to medium-high.

Add the diced potatoes in an even layer. Season with salt, black pepper, paprika, and garlic powder.

Cook the potatoes for 12–15 minutes, turning occasionally, until they are crispy on the outside and tender on the inside.

Return the caramelized onions to the skillet and gently toss with the potatoes.

Cook for an additional 2–3 minutes to combine flavors.
