Hearty and Flavorful Creamy Baked Broccoli with Tomatoes and Kale

 

Ingredients:

 

2 cups broccoli florets

 

1 cup cherry tomatoes, halved

 

2 cups kale, stems removed and roughly chopped

 

1 cup ricotta cheese

 

1/2 cup shredded mozzarella cheese

 

1/4 cup grated Parmesan cheese

 

2 cloves garlic, minced

 

2 tablespoons olive oil

 

1/2 teaspoon salt

 

1/4 teaspoon black pepper

 

1/4 teaspoon red pepper flakes (optional)

 

Fresh basil, for garnish

 

Directions:

 

Preheat the oven to 375°F (190°C).

 

In a large mixing bowl, combine the broccoli florets, cherry tomatoes, and chopped kale. Toss with olive oil, minced garlic, salt, black pepper, and red pepper flakes (if using).

 

Spread the vegetable mixture evenly in a baking dish.

 

In a separate bowl, mix the ricotta cheese, 1/4 cup of the mozzarella cheese, and the grated Parmesan cheese until well combined.

 

Dollop the cheese mixture over the vegetables in the baking dish, spreading it gently with a spatula.

 

Sprinkle the remaining 1/4 cup of mozzarella cheese on top of the cheese layer.

 

Cover the baking dish with aluminum foil and bake for 25 minutes.

 

Remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbly, and the vegetables are tender.

 

Garnish with fresh basil before serving.
