Ingredients

  • 2 cups cooked chicken, shredded or diced

  • 1 cup frozen mixed vegetables (peas, carrots, corn)

  • ½ teaspoon black pepper

  • ½ teaspoon dried parsley

Preparation

  1. Cook the pasta according to package directions until al dente. Drain and set aside.

  2. In a large skillet or pot, heat the butter and olive oil over medium heat.

  3. Add the diced onion and cook for 3–4 minutes until softened. Stir in the garlic and cook for 30 seconds until fragrant.

  4. Sprinkle the flour over the onions and stir well, cooking for about 1 minute to remove the raw flour taste.

  5. Slowly whisk in the chicken broth, then the milk, stirring constantly until the sauce thickens.

  6. Season with salt, black pepper, thyme, and parsley.

  7. Add the cooked chicken and frozen vegetables. Simmer for 5–7 minutes until everything is heated through and the vegetables are tender.

  8. Stir in the cooked pasta and mix until fully coated in the creamy sauce.

  9. If using cheese, add it now and stir until melted and smooth.

  10. Remove from heat and serve warm.
