Vegetable Beef Soup

 

Ingredients

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

2 potatoes, cubed

2 carrots, sliced

1 cup green beans

1 cup corn

1 can (14 oz) diced tomatoes

4 cups beef broth

1 tsp paprika

1 tsp Italian seasoning

Salt and black pepper, to taste

 

Instructions

In a large pot, brown the ground beef over medium heat. Drain excess fat.

 

Add onion and garlic; cook 2 minutes until fragrant.

 

Stir in potatoes, carrots, green beans, corn, and diced tomatoes.

 

Pour in beef broth and add paprika, Italian seasoning, salt, and pepper.

 

Bring to a boil, then reduce heat and simmer 25–30 minutes, until vegetables are tender.

 

Serve hot and enjoy a hearty, comforting soup.
