Chicken Pot Pie Soup

Warm up with this creamy Chicken Pot Pie Soup — all the comforting flavors of a pot pie in a cozy, spoonable bowl 🥣🍗. Easy to make and perfect for family dinners!

 

INGREDIENTS:

– 4 tablespoons unsalted butter 🧈

– 1 medium onion, chopped 🧅

– 2 celery stalks, chopped 🥬

– 1½ pounds baby Dutch yellow potatoes, cubed into 1/4-inch pieces 🥔

– 2 garlic cloves, minced 🧄

– 2/3 cup all-purpose flour 🌾

– 2 teaspoons salt 🧂

– 2 teaspoons poultry seasoning 🐔

– 1 teaspoon black pepper 🌶️

– 1 teaspoon dried oregano 🌿

– 1 teaspoon dried thyme 🌿

– 1 bay leaf 🍃

– 6 cups reduced-sodium chicken broth 🍗

– 10 ounces frozen mixed vegetables (carrots, peas, green beans, corn) 🥕🌽

– 2 cups rotisserie chicken, shredded or cubed 🍗

– 1 cup heavy cream 🥛

– 1 sheet puff pastry dough, thawed 🥐

 

INSTRUCTIONS:

1 Preheat oven to 400°F (200°C) if you plan to bake puff pastry discs in the oven 🥐.

2 In a large Dutch oven or heavy pot, melt the butter over medium heat 🧈.

3 Add the chopped onion, celery, cubed potatoes, and minced garlic. Sauté, stirring occasionally, until the vegetables soften, about 5–7 minutes 🍳.

4 Sprinkle the flour over the vegetables and stir to coat evenly. Cook 1–2 minutes to remove the raw flour taste 🌾.

5 Stir in salt, poultry seasoning, black pepper, oregano, thyme, and the bay leaf. Combine well to distribute the spices 🐔🌿.

6 Slowly pour in the chicken broth while stirring to prevent lumps. Bring the soup to a gentle simmer and cook for 15 minutes, until potatoes are tender 🍗.

7 Remove and discard the bay leaf. Stir in the frozen mixed vegetables and shredded rotisserie chicken. Continue cooking over low heat until vegetables are heated through, about 5–7 minutes 🥕🌽.

8 Stir in the heavy cream and heat gently without boiling. Adjust seasoning with extra salt and pepper to taste 🥛.

9 While the soup simmers, cut the puff pastry into rounds or strips sized for bowls or a sheet pan. Place on a parchment-lined baking sheet and bake per package directions (usually 12–15 minutes) until puffed and golden 🥐.

10 Ladle the soup into bowls and top each bowl with a piece of warm puff pastry, or serve the pastry on the side for dipping. Serve immediately and enjoy the comforting flavors 🍲.
