Ingredients

For the Crust:

  • 2 cups graham cracker crumbs

  • 2 tablespoons sugar

For the Filling:

  • 16 oz cream cheese, softened

  • ¾ cup granulated sugar

  • 2 large eggs

  • ¼ cup fresh lemon juice

  • 1 tablespoon lemon zest

Instructions

  1. Preheat oven to 350°F (175°C).

  2. Line a 9×9-inch baking pan with parchment paper.

  3. In a bowl, mix graham cracker crumbs, melted butter, and sugar.

  4. Press mixture firmly into the bottom of the pan.

  5. Bake crust for 8–10 minutes, then let cool slightly.

Make the Filling:

  2. Add sugar and mix until combined.

  3. Mix in eggs one at a time.

  4. Stir in lemon juice, lemon zest, and vanilla extract.

  5. Pour filling over crust and spread evenly.

  6. Bake for 30–35 minutes, until center is set.

  7. Cool completely, then refrigerate at least 3 hours before slicing.

Dust with powdered sugar before serving if desired.
