Ingredients

  • 4 bone-in pork chops (about 1-inch thick)

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon garlic powder

  • ½ cup all-purpose flour (for dredging)

  • 2 tablespoons butter

  • 2 large onions, thinly sliced

Instructions

Step 1: Season & Sear

  1. Pat pork chops dry and season both sides with salt, pepper, and garlic powder.

  2. Lightly dredge in flour, shaking off excess.

  3. Heat olive oil in a large skillet over medium heat.

  4. Sear pork chops for 3–4 minutes per side until golden brown. Remove and set aside.

Step 2: Make the Onion Gravy

  1. In the same skillet, melt butter and add sliced onions.

  2. Cook slowly for 10–15 minutes until caramelized and soft.

  3. Add minced garlic and cook for 30 seconds.

  4. Sprinkle 2 tablespoons of remaining flour into the skillet and stir for 1 minute.

  5. Gradually whisk in chicken broth and Worcestershire sauce.

  6. Add thyme and bring to a gentle simmer.

Step 3: Smother & Simmer

  1. Return pork chops to the skillet, spooning gravy over the top.

  2. Cover and simmer on low heat for 20–25 minutes until pork is tender and cooked through (internal temperature 145°F).
