Instructions

Step 1: Prepare the Meatloaf

  2. In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, Worcestershire sauce, salt, pepper, and thyme.

  3. Mix gently until just combined (do not overmix).

  4. Shape into a loaf and place in a greased baking dish or loaf pan.

  5. Bake for 55–65 minutes, or until internal temperature reaches 160°F (71°C).

Step 2: Make the Onion Gravy

  1. While meatloaf bakes, melt butter in a skillet over medium heat.

  2. Add sliced onions and cook slowly for 15–20 minutes until deeply caramelized.

  3. Sprinkle flour over onions and stir for 1 minute.

  4. Gradually whisk in beef broth and Worcestershire sauce.

  5. Simmer until thickened, about 5–7 minutes. Season with salt and pepper.

Step 3: Serve

  1. Let meatloaf rest for 10 minutes before slicing.

  2. Spoon warm onion gravy generously over each slice.

  • Use 80/20 ground beef for juicy texture.
