Preparation

In a bowl, dissolve yeast in warm milk with 1 tablespoon of sugar. Let sit 5–10 minutes until foamy.

In a large bowl, combine flour, remaining sugar, and salt.

Add yeast mixture, melted butter, and eggs. Mix until a soft dough forms.

Knead on a floured surface for 8–10 minutes until smooth and elastic.

Place dough in a greased bowl, cover, and let rise 1–1½ hours, until doubled.

Roll dough to ½-inch thickness and cut doughnuts. Place on parchment and let rise 30 minutes.

Heat oil to 350°F (175°C). Fry doughnuts 1–2 minutes per side until golden.
